“Wha gine on?” As I wove through a Friday nighttime crowd on the island of Barbados, I passed friends slapping hands and greeting each other in Barbadian slang. I’d come to Oistin’s Fish Fry—one of the islands social hubs—along with a good-timing crowd of locals who were kicking off the weekend with freshly caught fish, dancing, and glasses of rum punch.
From neighborhood bars to top restaurants, rum is the Barbados’ defining drink. It’s woven into the island’s history: Founded in 1703, Barbados’ Mount Gay Rum is the oldest existing rum distillery on earth, and it’s why I’d come to the Caribbean. After driving through a landscape of rolling sugarcane fields, I toured the distillery’s aromatic vats of molasses, polished copper stills, and a expansive aging room stacked high with oak barrels. In a whitewashed laboratory, I sipped aged rums that ranged from smoky, Scotch-inspired drinks to bottles that wafted tropical fruit aromas.

If you want to host a good mixer, serve up a large batch of rum punch. I recently did this for a school fundraiser and the party turned into a “rumaway.”
People drank the punch like water. They got wasted. One gal even puked! No, we aren’t a bunch of university revellers; we’re responsible adults — with kids even! But there’s just something about rum punch. It smells good, for starters, thanks to the nutmeg and Angostura bitters. It tastes good too, just as Mount Gay Eclipse rum mixed with brown sugar syrup and lime juice should. So there’s a danger folks will chug it, even though it’s strong.
Now that it’s garden party season it’s effortless to whip up a big punch bowl of it — just craft sure there’s a disclaimer next to the bowl. Something like, “Warning: this punch is really robust — it will obtain you drunk!”
